Set smoker/grill to 270F/132C (add pellet box if using grill)

Trim all silver skin, rub with mustard and coat with BK BBQ rub

Place roast on grill with a drip pan underneath (add a cup of water in pan)

Remove and wrap roast when internal temp is 164F/73C

Place wrapped roast back on grill until internal temp is 200F/93C

Remove and rest roast for 1.5 hrs

Slice roast into 1'' cubes and toss with sauce

Add pieces and residual sauce to grill safe dish, cover with foil

Increase grill heat to 300F/148C and add cooking dish

Caramelize burnt ends with sauce for 1 hr and enjoy
