COOK IT.
Preheat grill or smoker to 275°F.
Slice the pork belly into 1/2 inch by 2 inch cubes.
Season all sides of the pork belly cubes with BBQ rub, then coat with sugar.
Lay the seasoned and sugared pork belly cubes onto a roasting rack so none of the pieces touch. Drizzle with hot honey.
Place the rack of pork belly onto the upper most preheated rack of your grill or smoker. Allow to smoke for 2 hours minimum, rotating the rack every 20 minutes to ensure an even cook.
Remove from the smoker, drizzle or toss with more honey and BBQ rub as desired. Serve immediately!
