Mix bourbon, ginger beer and honey thoroughly. Marinate brisket with bourbon, ginger beer, and honey for at least 2 hours. Overnight if desired.

Remove brisket and apply salt and pepper generously and evenly.

Smoke at 225°F (107°C) for 9 hours or until internal temperature reaches 203°F (95°C).

Use a water pan to keep the humidity level in your cookbox high.
