COOK IT.
In a small bowl, mix to combine paprika, garlic powder, onion powder lemon pepper seasoning, oregano, salt, and pepper. Place chicken pieces into a resealable bag and sprinkle combined seasonings, pour the olive oil, and red wine vinegar. Mix to combine. Refrigerate and marinade for at least 2 hours or overnight.
Preheat Louisiana Grills to 350°F.
Remove chicken from marinade and shake any excess off. Discard the marinade. Thread each piece of chicken onto a skewer and place directly onto grill grates.
Grill the chicken skewers until minimum internal temperature of 165°F.
Plate and garnish with parsley. Serve with tzatziki, pita, Greek salad, and potatoes or your favorite sides.
