Place your sausage patties on the hot griddle and grill for a 2-3 minutes per side, or until you achieve a nice brown crust.

While your patties cook, crack 4 eggs directly onto the griddle top, adding salt and pepper to the sunny side of each egg. Flip after about a minute.

If you want to toast your brioche buns, add them to the grill, sliced side down.

Once toasted, pull your buns off the grill and top patties with a slice of cheese. Cook until melted and internal temperature reaches 160ºF.

Place each patty onto a bottom bun, followed by egg, then top bun.
