You may see short ribs sold as a Flanken cut in which the ribs and bone are cut longways with a saw, but for this recipe, you will want a traditional style cut.
The spicy flavors of Mesquite Hardwood will help enhance the savory flavors of this recipe nicely. Note: This recipe uses Louisiana Grills Chophouse Steak Rub seasoning.
Preheat the grill to 200°F. While the Grill is heating, season the ribs with the Louisiana grills Chophouse Steak Rub and place them on the grill for 1 hour.
After 1 hour, remove the ribs from the grill and increase the temp to 350°F. Once it is up to temp, place the ribs back on the grill until they are browned.
In a Dutch oven add the vegetable oil, garlic, onion, and celery. Sauté for 2-3 minutes.
Add the Guinness, beef stock, Dijon mustard and bring to a simmer.
Add the short ribs, cover and continue to cook for 3 hours.
Remove the ribs and serve with your favorite mash potato recipe.

To add another layer of flavor, do a reverse sear before braising in the beer.
