THE METHOD

COOK IT.

Season ground pork with kosher salt and ground black pepper.

Shape ground pork on kebabs sticks about 2 cm in diameter, leaving space on the kebab to hold.

Grill on MEDIUM-HIGH heat until kebabs reach an internal temperature of 160°F (71°C).

For the sauce, mix chopped lemon zest and mint into sour cream or a rich high-fat yogurt and season with salt and pepper to taste.

Serve with large diced tomatoes, cucumber, fresh arugula, and feta cheese.
