COOK IT.
Remove the membrane on the back of the ribs using the handle of a teaspoon.
Season generously with kosher salt, and place in the fridge for 2 hours.
40 minutes before smoking, remove the ribs from the fridge and bring to room temperature. Pre-heat grill to 225 by pressing the smoke button on your pellet hopper.
Smoke in pellet mode
Before smoking, coat ribs in a mixture of mustard and high smoke point oil - 75% mustard 25% oil. Baste onto rib racks, then season with fresh cracked pepper and Broil King KC rub.
Smoke 2 hours @ 225 F until ribs reach 165 F. Coat the bottom of the rib roaster with oil, remove the ribs from the grill and place in the rib roaster.
Roast in gas mode
Set two outer burners to 4 o’clock (low)
Roast for 3 hours @ 250 F until ribs reach 205 F
Remove from heat for 10 mins and turn on the middle two burners to 4 o’clock.
When the grill reaches 450 F, coat ribs with Broil King BBQ Sauce and grill for 10-15 minutes. Remove every second bone, plate and serve.
