THE METHOD

COOK IT.

Turn your Broil King® Pellet on then set it to 250°F (121°C). Follow the standard start-up instructions and preheat the grill completely.

Remove the skin from the pork belly but leave all of the fat in place. Cut pork belly into 1-in (2.5cm) cubes. Rub thoroughly with BBQ rub. Place the cubes into a roasting basket fat side up, and onto your preheated pellet grill. Roast for 2.5 hours, do not stir.

Turn the smoker up to 275°F (135°C). Combine sauce ingredients in a foil or stainless tray and place on the grill next to your roasting tray to warm and reduce the sauce. At the 3 hour mark mix the pork belly into the sauce thoroughly. Roast for an additional 2 hours, stir after 1 hour.

Remove then separate the sauce and the pork belly burnt ends, pour the sauce into a pan or pot and reduce volume by half or until it is thick and sticky. Turn your grill up to 400°F (204°C). Brush the pork belly with the reduced sauce. Return to the pan and bake the sauce onto the pork belly, additional 20 minutes.

Remove and serve. Dress for a safari, your guests will go wild for these candied pork bites!
