Set grill up for rotis

Rub roast with mustard, coat with seasonings and tie tightly

Slide the roast onto the spit securing in place with prongs

Place the spit in the rotis motor, with a drip pan underneath

Allow the roast to cook undisturbed until temp hits 130

Remove and wrap roast in foil or butcher paper

Rest roast for 35 mins

Slice thinly against the grain or thicker for a plated dinner
