Preheat your grill on high and brush grids with oil

Combine ingredients in a bowl for the filling

On a clean surface, lay out half your tortillas

Spread filling evenly across the tortillas and place the extra tortillas on top

Reduce grill heat to medium and grill the quesadillas for 2 minutes per side slighting turning them after 1 minute for perfect grill marks

Let them cool slightly then cut into wedges and enjoy
