We recommend using Louisiana Grills Georgia Pecan Hardwood Pellets with this recipe. The nutty, smoky flavor of the Pecan wood will help enhance the rustic flavors of the butternut squash.
Fire up your Louisiana Grills pellet grill and preheat to 350° F. If using a gas or charcoal grill, set it up for medium heat.
Place butternut squash on a stable cutting board and cut stem from squash, then cut in half lengthwise. Remove and discard seeds using a spoon. Score diagonal lines into surface of each squash half to form a diamond-like pattern, about ¼” deep.
In a small bowl, whisk together oil, salt, black pepper, Ancho chili powder, brown sugar, and maple syrup until a thick glaze forms.
Brush half of the glaze mixture on top of each squash half, and place ½ sprig of rosemary in the cavity where seeds once were.
Place squash, skin-side down, directly on grill grate. Grill for one hour, with lid closed.
Brush on remaining glaze, and grill an additional 30 minutes. Remove from grill and set aside.
Increase grill temperature to 400° F and place cast iron skillet directly on grill grates. Add diced bacon and sauté until crisp. Sprinkle bacon on top of squash halves and serve hot.

For more smoke flavor, fire up your grill to 200°F and smoke the cut squash for 1 hr prior to increasing temperature and applying the glaze.
