COOK IT.
Using the IQUE set your smoker at 245 for start up if using gas set your outside burners to medium
Truss (tie) chicken if not already
Sprinkle salt over whole chicken
Rub whole chicken with mustard
Combine rub ingredients in a bowl
Coat whole chicken with mustard then dry rub
Place chicken on smoker until internal reaches 178F, if using gas add your pellet box 15 mins before the chicken
Dice recommended vegetables and sauté together until soft
Bring water to a boil and add in rice and seasonings
Cover and bring to a rolling boiling then turn off heat and leave covered for 20 mins
Combine veg mix and filling ingredients (except cheese) in a large bowl and mix
Sprinkle shredded cheese on tortilla and add fill mixture
Roll bottom over fill, tuck sides in and flip towards top
Toast or grill to seal until golden brown
Serve with sour cream and enjoy
