COOK IT.
Mix all marinade ingredients together in a bowl using a whisk or shake all ingredients together in an air-tight jar.
Place chicken into a resealable bag and add the marinade.
Allow chicken to marinate for 1 hour minimum.
Place a drip pan below the grates over the flavour waves and fill it 1/2 full of warm water.
Turn on the Pellet module, and set the temperature to 250 F.
Place your marinated chicken directly on the grates once the grill has pre-heated with pellets.
Insert a probe into the thickest and thinnest chicken breast to get your range of doneness.
Smoke to 130 F and then remove to a resting pan, turn off the pellet hopper and then turn your gas grill on to medium: 450-500 F.
Spray your chicken breast with a high smoke point oil, and either spray the grates or use a basting brush to apply high smoke point oil to the cooking grids.
Place your chicken breast on the preheated grill at the 10 o'clock position. Turning after 2 minutes to 2 o'clock, and repeating this step until your chicken reaches 165 F internal temperature.
Allow chicken to rest for 5 minutes, use the juice of one lemon to coat the cooked chicken breast.
