Slice pork into thick slices and marinate in olive oil, Worcestershire, soy sauce, thyme, and salt for no more than 1/2 hour.

Smoke at 250°F (121°C) for 2 hours until pork is extremely tender.

Let cool for 15 minutes.

Chop pork into cubes and place in a roasting pot.

Place rough cut onion, peppers, and tomatoes on top with 2 tablespoons of grainy mustard.

Stew uncovered at 350°F (177°C) for 20 to 30 minutes.
