COOK IT.
Place the halved peaches into your Oakford, cut side up.
Smoke the peaches for about 2 hours or until they're soft and offer a robust, smoky aroma.
Remove the peaches from your Oakford and let them cool.
In a cocktail shaker, muddle together two smoked peach halves, lemon juice, honey (or simple syrup), and a few fresh mint leaves.
Add Pendleton Whisky to the shaker and fill with crushed ice.
Shake vigorously until well combined and chilled.
Strain the cocktail into two glasses, making sure to press on the muddles peaches to extract all the refreshing juices.
Garnish each glass with a slice of the remaining smoked peach and a sprig of fresh mint.
Serve immediately and enjoy the 'ahhh'.
